SPECIAL NEW RECIPES FOR THE RECESSION.  

Delicious low cost recipes from our mothers and grandmothers.  We have gathered recipes from the 1930’s and 40’s (adapted for 2009).

 

GROUND BEEF AND SPINACH SPECIAL

 

2 lb. ground beef ...2 large onions chopped

garlic salt ...olive oil

2 boxes frozen chopped spinach – drained ...1 can chicken broth or 2 cubes chicken bouillon

dissolved 1 ½ cups water ...1 cup Feta cheese or grated Parmesan cheese

1 can black olives, cut in half (optional) ...2 large plum tomatoes, diced or 1 can diced tomatoes

Rice

In a large pot, brown the chopped onion in olive oil. Brown the ground beef, add chicken broth and garlic salt and simmer for about 35 minutes.

Add olives, tomatoes, crumbled cheese and spinach. Simmer for 10 minutes more.

Serve over rice.


BAKED ITALIAN SAUSAGE  CASSEROLE

2 lb. Sweet Italian sausage washed and cut into 3 inch pieces ...1 or 2 green peppers washed and cut into 2 inch strips

1 large onion cut into 1 inch wide strips ...5 medium size potatoes cut into 1 inch slices

1/2 cup water

Use non-stick baking pan or lightly oiled pan or spray with Pam. Put potatoes in pan and top with onions and peppers. Put sausage on top. Pour l/2 cup water evenly over top. Bake in a 375 degree oven until sausage is browned. Remove pan and turn sausage, then toss potatoes, peppers and onions to mix flavors together. Return to oven and continue to bake for l hour. Test potatoes for doneness.

Alternate recipe: Instead of peppers, frozen green beans or broccoli–defrosted in the microwave - can be substituted.
