SPECIAL NEW RECIPES FOR THE RECESSION.  

Delicious low cost recipes from our mothers and grandmothers.  We have gathered recipes from the 1930’s and 40’s (adapted for 2009).

 

ITALIAN STYLE MACARONI, TOMATO AND CHEESE

DELICIOUS

1 can diced tomatoes ... 8 oz. grated cheddar cheese or Monterey Jack cheese

1 cup milk ... 1 tbsp. flour

1 tbsp. butter or margarine ... 8 – 10 oz. pasta, e.g. penne, regatta or shells

1 teas. Dijon mustard ... Boil pasta as directed and drain. Make white sauce:

Melt margarine in saucepan: mix the milk and flour together.

Pour over the melted margarine and add l tsp. Dijon mustard.

Cook all together until thickened

Add 8 oz. grated or cubed cheese to white sauce and mix well.

Pour over drained pasta in a large bowl.

Add 1 can diced tomatoes and mix all together. Put mixture in a glass dish or Corning ware and cover. Bake in a 375 degree oven for ½ hour until mixture bubbles

Remove cover and bake 15 minutes more.
