BROCCOLI & RICE STIR-FRY approx: 6 servings 1½ CUPS Uncooked long-grain rice; 2 Eggs - beaten; 1 TBSP Vegetable Oil; 2 TBSP Soy Sauce; 1 (16oz) package Frozen Broccoli florets thawed; Salt & Pepper to taste; 3 Green Onions – diced. In a saucepan bring 3 cups water to a boil. Stir in rice, reduce heat, cover, and simmer for 20 minutes. Heat oil in a large skillet over medium heat. Saute broccoli until tender crisp, and add scallions. Remove from skillet. Add eggs, scramble, then return broccoli mixture to pan. Stir in cooked rice, soy sauce, salt and pepper. (You can modify this recipe to include any frozen veggies you choose) |
