SPECIAL NEW RECIPES FOR THE RECESSION. 

Delicious low cost recipes from our mothers and grandmothers.  We have gathered recipes from the 1930’s and 40’s (adapted for 2009).

 

MEATBALL IN RED GRAVY OVER SWEET POTATOES

A MEMORY FROM CHILDHOOD

1 ½ lb. ground beef ... 1 lg. egg

1 to 1 ½ cups seasoned bread crumbs ... 1 tbsp. onion flakes – or fresh chopped onion

Mix all together and form into 1 to 2 inch meatballs ... Fry in a small amount of oil – or bake or broil in baking pan

sprayed with Pam

In a four quart pot, pour l jar or can of tomato sauce

Add liquid from 1 can peas (hold peas until later)

Season to taste

Add meatballs, bring to boil and simmer for 45 minutes

Add peas in last 5 minutes of cooking

Sweet potatoes scrubbed and peeled. Boil until cooked through

(in a separate pot)

On a dinner plate, place sliced (or mashed with fork) sweet potatoes

Ladle meatballs in red sauce over the sweet potatoes.

Note: sweet potatoes are preferred over yams


MOM’S ITALIAN STEW

Brown 1 medium onion in a small amount of oil (or use 2 tbsp. onion flakes)

1 can crushed tomatoes or tomato sauce, mixed with

1 can chicken or beef broth (or bullion broth cubes)

Sprinkle with l tbsp. Basil

1 tbsp. garlic salt or powder (optional)

Stir all together

Wash, peel and quarter 5 medium potatoes

Add 2 cups frozen green beans, defrosted

(can use canned green beans and add last 10 minutes of cooking)

In a separate bowl, mix 1 ½ pounds ground beef with 1 egg and

1 cup plain or seasoned bread crumbs and onion flakes. Form into meat patties

and brown in a small amount of oil.

Add meat patties to stew and simmer l hour covered or until cooked thoroughly.
