Delicious low cost recipes from our mothers and grandmothers.  We have gathered recipes from the 1930’s and 40’s (adapted for 2009).

 

NANA’S MACARONI AND PEAS IN RED SAUCE

Easy and inexpensive to prepare

Use a four quart pot

Sauté 1 chopped onion in small amount of oil until slightly brown

Add l small can tomato paste

Add 3 ½ cups water and thoroughly mix all together

Bring to simmer and cook covered for ½ hour

Add liquid from 1 can peas – save peas for later use

Add l teas. garlic salt or powder

Simmer for an additional 20 minutes

Add peas and cook 5 minutes more

Optional – add salt to taste

Cook elbow macaroni or Ditalini pasta

Mix all together and serve in soup dish

Note: 2 tbsp. onion flakes may be used in place of chopped onion if desired

 


ARLENE’S HEALTHY DINNER FOR 85 CENTS A SERVING

NOODLES, EGGS AND VEGETABLE

1 medium onion chopped

Saute in 1 teas. oil

In a separate pot, cook ¾ cut noodles or elbow macaroni until soft; drain

Stir noodles into pan with chopped onions

2 eggs, slightly beaten with fork

Pour eggs over noodles and onions; stir over moderate heat until eggs are cooked

To complete dinner: cook fresh beets, carrots, green beans or peas

(Slightly higher cost – use canned or frozen vegetable)
