SPECIAL NEW RECIPES FOR THE RECESSION.  

Delicious low cost recipes from our mothers and grandmothers.  We have gathered recipes from the 1930’s and 40’s (adapted for 2009).

 

ZUCCHINI CASSEROLE

 

1 MEDIUM SIZED ZUCCHINI, UNPEELED, CUT INTO BITE SIZE PIECES

1 MEDIUM ONION, DICED ...1 GREEN OR RED PEPPER, DICED

MUSHROOMS SLICED ... GARLIC OR GARLIC POWDER

PREHEAT OVEN TO 350 DEGREES. GREASE LARGE BAKING DISH

SAUTE ABOVE VEGETABLES IN OLIVE OIL. BRING POT OF WATER

TO A BOIL AND ADD ABOUT 3 TO 4 HANDSFUL OF NOODLES. COOK AS

DIRECTED ON PACKAGE.

MEANWHILE, ADD TO THE VEGETABLES ONE LARGE CAN DICED TOMATOES AND

AND ONE SMALL CAN TOMATO SAUCE. ADD SPICES AS DESIRED (SALT, PEPPER,

OREGANO, SUGAR, ETC.) SIMMER ALL TOGETHER WHILE NOODLES COOK.

DRAIN NOODLES AND ADD TO VEGETABLE MIXTURE. MIX WELL. POUR HALF

INTO THE BAKING DISH, TOP WITH ABOUT 4 OZ. SHREDDED MOZZARELLA CHEESE AND SOME GRATED PARMESIAN CHEESE IF DESIRED. TOP WITH REMAINING

VEGETABLE MIXTURE, MORE CHEESE AND BREAD CRUMBS IF DESIRED.

HEAT IN OVEN ABOUT 30 MINUTES UNTIL HEATED THROUGH AND BUBBLING.
