WINTERTIME MEAL SUGGESTIONHearty Vegetable Beef Soup/Stew In a large pot, place one large can of beef broth, one lb. lean beef cubes in bite size pieces, fresh or 2 bags frozen vegetables, e.g. carrots, finely chopped onions, celery, green beans, peas, cubed potatoes, or half a cup of barley (sold dry in plastic bags - rinse barley before using). Add 2 cups chicken stock and 1 can diced tomatoes (optional). Add 1 tbsp. garlic powder and thyme to taste.Add additional beef broth or chicken stock to bring contents to 2 inches below the top of crock pot. Cook on high until it comes to a simmer, turn to low and continue to cook for approximately 4 hours or until meat and vegetables are very tender.If barley is not used, you can thicken with cornstarch. Serve over cooked rice or small pasta; place in large section of dinner tray and one small section. Put apple sauce in the other small section of tray. (Note: Swanson Chicken Stock has no MSG, low sodium)
